  • 4 medium boneless, skinless chicken breasts, 4 oz each
  • 1 tsp paprika
  • 1 tsp ground mustard seed
  • 1/4 tsp cayenne pepper, or to taste
  • 1/2 tsp kosher salt
  • 1/8 tsp ground pepper
  • 2 tbsp olive oil, divided

Mustard sauce:

  • 1/4 cup honey
  • 3 tbsp chicken stock
  • 2 tbsp dijon mustard
  • 1 tbsp wholegrain mustard
  • 1 tsp white vinegar
  • 1 tsp sriracha sauce, or to taste
  • a small handful of fresh thyme, to garnish
